SIMPLE HEALTHY BEEF STIR FRY

This is a great recipe if you are short on time as it is quick and easy to do without forgoing taste or nutrition. If you are wanting to make it a vegetarian or plant based meal then you can easily switch out the flank steak for tempeh steaks. INGREDIENTS

Flank steak – 500g

Broccoli – 4 Cups florets

Brown Rice – 1.5 Cups

Green capsicum – 1

Onion – 1

White button mushrooms – 1 Cup

Sesame seeds – 1 Tsp

Olive oil – 1 Tbsp

Garlic – 3 Cloves

Chilli flakes – 1 Tbsp

Ground ginger – 1 Tsp

Soy sauce – 2 Tbsp

Serves 4

PREPARATION

Bring a pot of water to boil and start cooking the rice until soft. Alternatively, you can opt for pre-cooked rice.

Heat 1 tablespoon olive oil in a large skillet on medium-high heat. Add beef, chilli and ginger and stir-fry for 3-5 minutes, until sufficiently cooked. Remove from pan and set aside.

In the same pan, stir-fry garlic, broccoli, onion, capsicum and mushrooms in the remaining oil, for 3-5 minutes, then add the beef back in and cook for a further 2 min. You can add soy sauce in whilst cooking, or for serving along with the sesame seeds.
