Recipe for Fruit and Nut Porridge


Warming winter breakfast recipe – fruit and nut porridge

The beauty of this recipe is, it’s a great winter warmer and also keeps you feeling full while still sustaining your energy throughout the morning.

If you are short on time in the morning you can always pre soak your oats overnight in the fridge and just place them in the microwave for a minute in the morning before garnishing.

This is definitely one of my favourite recipes from my website and is also a real hit with my FHIT members (not only in Winter but all year round).

Ingredients – Serves 1

  1. Plain Yoghurt – 1/2 Cup
  2. Orange – 1/2
  3. Rolled Oats – 1/3 Cup
  4. Blueberries – 1/4 Cup
  5. Pumpkin seeds – 12g


  1. Put the oats in a non-stick pan with 200ml water and cook over the heat, stirring occasionally for about 4 mins until thickened.
  2. Meanwhile, cut the peel and pith from the orange then slice it in half, cutting down either side, as closely as you can, to where the stalk would be as this will remove quite a tough section of the membrane. Now just chop the orange.
  3. Pour the porridge into bowl, spoon on the yoghurt, then pile on the orange, blueberry and seed mixture.

    Note: Add 1/4 Banana to garnish if you wish.
